The cellars
Innovation and tradition aren’t two opposing concepts, but rather two complementary aspects of Valfieri’s philosophy. For this reason, we use large, old oak barrels as well as modern French oak barriques in our cellar. Each wood is used for different times and in different ways to age the wine in the most appropriate manner, and to refine it for different times and in different ways according to the character of the vintage and of its origin.
